Inspiration Ten easy dinners for the midweek rush

Ten easy dinners for the midweek rush

Families are busy enough without adding the stress of what to have for dinner each night, so we’ve gathered ten easy dinners in one place so that you don’t have to. Autumn has hit so we’ve got the slow cookers out and are putting them to good use. We’re also huge fans of dinners that are delicious but are on the table in under 30 minutes.

Check out the easy dinner recipes below and remember to share your creations with us on social media.

Golden-brown breaded cutlets with herbs on a baking sheet, with a side of coleslaw.Golden-brown breaded cutlets with herbs on a baking sheet, with a side of coleslaw.

This is a real family favourite and is so easy to pull together. The cheesy addition under the crumbs is easy to do but adds a little extra boost. We love it served with a good coleslaw or steamed greens for simplicity.

This is a slow cooker dream dinner. Throw everything into the slow cooker and leave for 9 hours on low. Come home and your home smells like a Moroccan bazaar. Serve with fluffy couscous (Pro tip – the leftovers are divine for lunch the next day!)

Beef stroganoff with pasta, green beans, and broccolini on a blue plate.Beef stroganoff with pasta, green beans, and broccolini on a blue plate.

This is dinner on the table in under 30 minutes. We love using thinly sliced rump steak – the key is not to over cook it and it will be oh so tender, in that mushroomy laden sauce. Serve with fettucine, rice or even in pita breads if that’s all you have.

Most people think of a burger a summer meal, but it’s a great option for the cooler months too. Load it up with whatever salad type vegetables on hand and you’ll have the whole family tucking in.

Salad with sliced rare beef, figs, walnuts, crumbled white cheese, and mixed greens on a blue patterned plate.Salad with sliced rare beef, figs, walnuts, crumbled white cheese, and mixed greens on a blue patterned plate.

This is a warm salad that basically consists of opening packets while the lamb is searing. Then slicing and serving. It’s delicious and yes, a little bougie but it’s easy and fast.

Meatball skewers with vegetables and a side of creamy white dip on a white plate.Meatball skewers with vegetables and a side of creamy white dip on a white plate.

These take no time to pull together and are totally delicious. A quick grill in the oven and you’re away! We love them with a zesty yoghurt dip and fresh vegetables but a pile of herby rice wouldn’t go astray underneath them either.

Cheeseburger pizza topped with pickles on a wooden board, with gherkins, pizza sauce, and parsley nearby.Cheeseburger pizza topped with pickles on a wooden board, with gherkins, pizza sauce, and parsley nearby.

With a few careful purchases, this is a delicious dinner on the table in no time. Who would argue with a pizza that tastes like a cheeseburger?

These are literally the best lamb shanks we’ve had. Full of flavour, so perfectly tender and truly delicious. Using our favourite Sone’s Satay Sauce, we recommend doubling recipe because you’ll be coming back for seconds.

Beef stir-fry or curry is an easy dinner option for the midweek hustle. Take fresh vegetables, the goodness of beef strips and the healthy carb of brown rice and you’ve got a dinner that ticks all the boxes.
