Loaded with green goodness, a protein kick from the cannelini beans and a dressing that will keep in the fridge for a week, this salad makes your steak dinner shine. Ingredients
3 cups green beans
trimmed and cut into smaller pieces1 x 400g can cannellini beans
washed and drained1 handful chopped fresh parsley
3 Tbsp chives
grated zest of 1 lemon
juice of 1 lemon
1 Tbsp Dijon mustard
1 garlic clove
minced4 Tbsp olive oil
A pinch black pepper
½ tsp chilli flakes
(optional)
Method
In a small bowl, combine the dressing ingredients.
In a large bowl, add salad ingredients and mix well. Cover with the salad dressing and serve.
Note – this is also delicious if you steam the green beans until just tender.
